Chickpea fries

Great material for fries is not only potatoes, pumpkin, or celery, but also chickpeas. More specifically - chickpea flour. Prepare a batch of chickpea fries for your small ones!

Ingredients
  

  • 1 diced red pepper
  • 2 grated carrots
  • 2 grated cloves of garlic
  • 1 egg
  • 30 g fresh coliander
  • 2 diced shallots
  • 1 peeled and grated thumb-sized piece of ginger
  • 1 can of chickpeas, drained
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tbsp flour
  • 1 tsp garam masala
  • lemon peel
  • olive oil

Instructions
 

  • Combine the red pepper, shallots, garlic, lemon peel, and ginger in a large bowl.
  • Squeeze the carrots to remove the excess juice then add to the bowl.
  • Place the chickpeas in a food processor and whiz for a few seconds until they break down and become crumbly (if you don't have a food processor, simply mash the chickpeas with a fork).
  • Add the chickpeas to the bowl along with the garam masala, cumin and ground coriander.
  • Add the egg and mix well, then sift the flour and mix again.
  • Form small discs and fry for about 3 minutes on each side in a little olive oil.
  • Once fried, remove and place on kitchen paper to cool.
  • If you need any topping - make the tzatziki! Combine the cucumber, garlic and yogurt in a bowl. Add the chopped cilantro to the fries.
