Vegan banana bread
We all have a craving for something sweet from time to time. This vegan banana bread is just what you want - a guilt-free and healthy dessert without added sugar and full of fiber! Healthy but still incredibly delicious - baked dates and melted chocolate (chips) make this banana bread very caramelly and decadent. Fair warning - you may end up eating it all in one session!

3 bananas 3 tbsp nut butter of your choice 8-10 dates ( use more dates for sweeter bread; keep half in chunks to add to the batter at the end with chocolate chips/grated chocolate; ) 3 tbsp any plant milk (or water, or even regular milk if you don't care about keeping it vegan) 1 tsp vanilla extract 1 tsp baking powder 5 tbsp gluten-free flour of your choice - any of those work: coconut, almond, quinoa, oat, millet⠀ 1 tsp cinnamon 1/2 tsp cardamon ¼ tsp OPTIONAL - nutmeg, cloves, ginger - for those who like gingerbread flavors; 1/4 cup grated dark chocolate or chocolate chips
In a blender or food processor, add bananas, half the dates, peanut butter, vanilla extract, baking powder, spices and milk.
Blend until smooth (for about 30 sec).
Add flour, and blend again until incorporated (if too thick - add 1-2 more spoons of milk).
Add chopped dates and chocolate, and mix with a spatula until combined.
Preheat oven to 350 degrees F.
Transfer to a loaf form with baking parchment.
Bake for about an hour or until a toothpick comes out dry.
This banana bread is the best while still warm!
