Easy vegan banana bread.⠀

 

We all get a sweet craving from time to time. I myself, have a sweet tooth big time so I at least try to stick to healthier treat options. I found this recipe on my favorite Yoga instructor’s Youtube channel ( Gosia Mostowska is Polish and so the video is in Polish). I was very skeptical about this vegan recipe, but I’ve tried it and damn, this banana bread is yum and then some! What you get is a deliciously caramelly and chocolatey guilt-free treat that melts in your mouth. ⠀
Fair warning – you might end up eating the whole banana bread by yourself.⠀

 

 

Easy vegan banana bread.⠀

Preheat oven to 375F. ⠀

Ingredients⠀
3 bananas ⠀
3 tbs of nut butter of your choice ⠀
8 dates (keep 4 in chunks to add to the batter at the end with chocolate chips) ⠀
3 spoons of any plant milk (or water, or even regular milk if you don’t care about keeping it vegan) ⠀
1 tsp of vanilla extract ⠀
1tsp baking powder ⠀
Spices – 1tsp cinnamon, 1/2 tsp coriander, additionally if you like more gingery taste 1/4tsp – ginger, allspice, cloves; ⠀
1/4 cup grated dark chocolate or chocolate chips;⠀
5 heaping spoons of gluten-free flour of your choice – any of those work: coconut, almond, quinoa, oat, millet; (You can mix 2 or more if you like);⠀

Preparation⠀
In a blender or food processor, add bananas, half of the dates, nut butter, vanilla extract, baking powder, spices, and milk. ⠀
Blend until smooth (for about 30 sec). Add flour, blend until again incorporated. (If too thick – add 1-2 more spoons of milk.) Add chopped dates and chocolate, mix with a spoon till incorporated. Transfer to a bread form with baking parchment. ⠀
Bake for about an hour or until a toothpick comes out dry. ⠀
This bread is the best while still warm. ⠀
